Anyone else on a Super Bowl food hangover still? Joe is traveling for work this week which is forcing me to eat leftover's from the big game. I can't really complain though because this recipe I have today is something I've been snacking on (okay eating for dinner too) for the past few nights! It's so easy to make since everything goes into the crock pot and that's it!
Ingredients:
1- 10oz box frozen spinach, thawed
2- 15oz cans artichoke hearts (they come packaged in water), chopped
1- 5.2oz packaged Boursin
1 1/2 C shredded white cheddar
1/2 C grated Parmesan cheese
2 cloves garlic, chopped
1 tsp. crushed red pepper flakes
pinch of salt
Directions:
In a small slow cooker, combine all ingredients and cover. Cook over high heat for 1 hour. Stir until creamy then reduce heat to low. Continue to cook for another hour. I like room tempature so I let sit uncovered for 30 minutes before putting in bowl.
For Bread Bowl:
Purchase round sourdough bread. With sharp bread knife cut into top of bread about 3/4 down. Continue in circle until cut fully around. Remove the 'lid' or inside of bread bowl and cut into smaller pieces for dipping. Add spinach artichoke dip inside bread and serve.
