Sausage & Tortellini Dinner Night

I've said this before, but when I get home from work, especially in summer, the last thing I want to do is cook dinner. Sadly, that then turns into heating up pre-made meals from the local butcher- which aren't necessary a bad thing, but I love getting the satisfaction of actually cooking my dinner! This is a simple recipe that you can put on the stove walk away while you put laundry in and come back to it a few minutes later!


Ingredients:

1 bag frozen Cheese Tortellini
2 links Sausage (can use smoked or spicy)
1 can diced tomatoes
2 cups chicken broth
8 oz cream cheese
1 tbsp onions- chopped
2 cloves garlic- minced
1 tsp olive oil
1 cup shredded cheddar cheese
Parmesan cheese grated to top

Directions:

In large pan add olive oil and sausage to cook o medium hear. Be careful as the oil hears up it may splash. I used a splatter screen for protection. Cook for about 10 minutes while rotating for an even browning.  Add minced garlic and chopped onions. While meat is cooking, make pasta according to bag. In large pan, when sausage is finished cooking, lower stove top to low.  Add in diced tomatoes, chicken broth, and cream cheese. Mix evenly so that everything is combined and cream cheese is melted. You will now have a thicker sauce. Add in tortellini and shredded cheese. Let sit for 5-7 minutes before serving. Top with Parmesan cheese for added flavor.
