This past weekend we had a bunch of friends over for a Memorial Day/ Housewarming party. It was so much fun! We loved having everyone in our own home, enjoying each other's company, our kids playing and relaxing in the pool.
I had made these whipped feta and tomato crostini's and as you can see from the picture below, even before I could snap a picture, guests were snatching them up! They were delicious and really not hard to make.
Ingredients
- 6 ounces crumbled feta
- 2 ounces cream cheese, room temperature
- 2 ounces olive oil, divided into 1/3's
- 2 tbsp fresh squeezed lemon juice
- 2 tbsp minced red onions
- 2 tsp minced garlic
- 2 tbsp red wine vinegar
- 2 lbs cherry tomatoes, diced
- 3 tbsp fresh basil leaves
- 1 bag of sliced baguette chips
- Kosher salt and ground pepper
Instructions
Place the feta and cream cheese in blender or food processor and mix well.Add 1/3 cup of the olive oil, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper and process until smooth.An hour before serving, combine the onions, garlic, and vinegar in a medium bowl. Set aside for 5 minutes. Whisk in the remaining 1/3 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the tomatoes, stir gently, and set aside for 10 minutes. Stir in the basil and taste for seasonings.
Assemble crostini spreading each slice of bread with a generous amount of whipped feta. With a slotted spoon, place the tomatoes on top. If serving right away, add some of the juices onto each crostini. If not serving right away it will make them soggy. Garnish with basil.
