Easy Mexican Lasagna

Who else loves a quick week night meal! With our busy schedules I am always on the hunt for quick, easy and NOT frozen!


When I saw Madi post this easy Mexican Lasagne I knew this would be a hit! It's so easy to make, and you can can even freeze it to make at a later time!


Ingredients:

1 lb ground beef
1 cup salsa
1 package taco seasoning
6 large flour tortillas (use more if using small ones)
1 can pinto beans
1-2 cups shredded mexican 4 cheese

Directions:

Heat oven to 400 degrees. Brown the beef and drain. Stir in salsa and taco seasoning. Simmer for 10 minutes on low. Spread some ground beef on bottom of baking dish then cover with two tortillas. Add another layer of ground beef, half the beans, 1.2 cup cheese and cover with two more tortillas. Repeat layers and top with cheese. Cover with foil and bake for 30 minutes. Remove foil and cook another 5 minutes.  This serves about 4-6 people!







Top with more salsa, guacamole, and sour cream!!
