Banana Chocolate Chip Muffins

Sunday morning I woke up all bushy tailed and ready to start the day at 8 am sharp! Now to most that may not seem early, but after a full day of sampling beers (I was suppose to be working for Joe pouring the beers.. I may have been pouring them also for myself) followed by another beer event at night and dinner and more drinks with friends. Needless to say, it should have been a rough morning. I woke up and knew I wanted to make something with the bananas I had sitting on the counter for a week.  With a quick look on pinterest, Banana Chocolate Chip Muffins it was!



Ingredients:

4 Ripe Bananas (mine were almost mushy)
1/3  cup melted butter
3/4 cup  sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
pinch of salt
1 1/2 cups all purpose flour
1 cup chocolate chips (or however many your little heart desires)

Directions:

Preheat oven to 350 degrees. Grease your muffins tins. I used cupcake tins since they were the only ones I have. Peel your bananas and remove any brown spots. Smash them until there are no chunks and add melted butter. To save time, I threw mine into my kitchenaide mixer. Mix in sugar, egg & vanilla until combined.  Add in salt and baking soda and mix.  Pour in the flour and mix well. Dump in as many chocolate chips as you like just make sure mix a little so there are some in every muffin. Pour evenly into muffin tins. My yielded about 12 muffins but may vary due to size of bananas you use. Bake for 20 minutes. They will start to get golden brown. Check middles to make sure they are done before removing. Remove from tins to cool on rack.
