This recipe is one that I am stealing from my mom! I would have to say that these potatoes are one of my comfort foods growing up and still are! They are great because you can throw them in the oven, get a work out in and when you are done, so are they! Best part is there really is not right or wrong to this recipe. You make them to your preference how roasted you would like them.
Ingredients:
(all measurements are estimates and can use more or less to your liking)
Whole Potatoes (canned)
Bread Crumbs: 1 cup
Olive Oil: 1/2cup
Garlic Powder: 1/2 tbsp
Grated Cheese: 1/2 tbsp
Open cans of potatoes and drain (I used two cans of potatoes- see above for about two servings). Add potatoes to large mixing bowl and mix with olive oil. Cover with bread crumbs. Add garlic powered and grated cheese and mix well.
Add mixture to roasting pan. Place in over at 350 degrees for about an hour to get roasted. You can take them out before if desired (pictured potatoes were left in for 45 minutes).
I like to place them in bowl to sit a few minutes before serving. You can add more garlic powder or cheese if desired!
