Mini Carmel Apple Pies

Joe & I visited Battlefield Orchards & Pumpkin Patch in Freehold, NJ last weekend.  We got some nice big apples and thought.. well now what to do with them!? Make Apple Pie of course! I am not a big pie person- at all! But thought there has to be a smaller, different version to make.  I present to you the very YUMMY personal Mini Apple Pies!

Ingredients: (recipe yields 6- double for 12)

  • 2 tablespoons of all-purpose flour
  • 1 tablespoons freshly squeezed lemon juice (from 1 lemon)
  • 2 cups of chopped apples (about 2 apples)
  • 1/4 cup sugar (can use smaller amount if you don’t want it as sweet)
  • 1 teaspoon ground cinnamon
  • pinch of salt
  • 6 slices of unsalted butter, cut into small pieces
  • 6 mini graham crumb pie crusts
  • 6 carmels






  • Skin, Core & Chop Apples into small pieces and add to bowl
  • Mix in flour, sugar, lemon, cinnamon and salt with apples 
  • Heat oven to 350 degrees
  • Add pie filling to each pie crust 
  • Put one slice of butter and one carmel per pie
  • Place in oven for about 15-20 minutes until carmel is fully melted
