Fresh Corn Salad

I went to the local grocery store down the shore during July 4th holiday weekend and apparently thought I needed to buy 14 ears of corn. Not to mention NO ONE ate any corn!!! So what to do what to do?? Make fresh corn salad of course!

Ingredients:


5 ears of corn, shucked1/2 cup small-diced red onion (1 small onion)3 tablespoons cider vinegar3 tablespoons good olive oil1/2 teaspoon kosher salt1/2 teaspoon freshly ground black pepper


Directions:

In a large pan, boil corn with added salt for about 3 minutes. When the starchiness is gone, strain water and submerge corn in cold water.  When corn is cooled, cut kernels off the cob.  Stir in red onion, vinegar, olive oil, salt & pepper.  For added flavor you can add in fresh basil.  Put in fridge until ready to serve.  Serve chilled & enjoy!
