Thin Mint Cupcakes

There is no denying I love cupcakes.  You may remember when I first started blogging I did a Friday series called Fun Four Friday, where I highlighted four things from the week I was thankful for or enjoyed.  The logo for this series was a cupcake.  I also used to have fleece cupcake sheets on my bed in the winter, oh yeah with a matching blanket.  anddd hanging on my car mirror is a cupcake keychain and car freshener in the shape of a cupcake. Umm.. did you see my signature at the bottom of the page? Yeah I like cupcakes. All kinds of Cupcakes. 'My name is Ashley and I am addicted to cupcakes.'

Okay, enough of that. Today I'm sharing with you, well.. a cupcake.  But this is one you can make too. Super simple and I used things found in my pantry.

Ingredients:

Chocolate cake mix
Hershey Mint Chocolate Chips (I purchased mine while in Hershey PA but are available in some baking aisles.. can substitute crushed Andes mints)
Vanilla Icing
Green Food Coloring


Are you ready for this recipe.. it's a little tricky.
Make cupcakes according to box. Add in desired chips. Mix vanilla frosting with about 3 drops of food coloring. Garish with more chips. Voila!
